Quick and Easy
On top of the fact that these cookies have a distinct, cake-like consistency that is also ooey-gooey and delicious, they are super easy to make! Using the cake mix makes this such a quick process and clean-up is a breeze.
1 Box dry cake mix of your choice (I used a yellow cake mix)
1 Box dry instant pudding mix (I used chocolate)
1 1/2 sticks butter, softened
3 eggs
Sprinkles or chocolate chips if desired.

Mix all ingredients together well. Drop by spoonful or roll into 1" balls and place on cookie sheet.
Bake at 350 degrees for 10 to 12 minutes.
Let sit for 1 minute on the pan, then move to a cooling rack. Enjoy!

I have an Amish friend who adds 1 cup of flour to her cake mix cookies to give them just a little bit of the cookie feel to the batter then freezes them. They thaw and are just as soft as if they just came from the oven.

I love these recipes. I also love bringing cake batter cookies to a gathering and having people think I just spent hours and hours making such yummy cookies when in reality I mixed up cake batter, added a couple ingredients and sat and read a book while they baked lol.
